The Pies That Came With Us From Casa Tomas

Still baked the same way, on the same counter.

Our pies started in Karen’s mom’s kitchen. Buttermilk first — a sweet, custard-rich Texas classic her mother had been making for family gatherings long before we owned a restaurant. Then pecan. Then the banana pudding pie that kept showing up at every birthday until somebody finally said we ought to sell it. When we opened Farmhouse Cafe in 1993, the recipes came with us, and we’ve never changed them.

Brian’s the one behind the counter most mornings — pulling pies out of the oven, sliding them into the case before the first customer walks in. The photo on this page is real. He really is holding four pies, and they really were baked an hour earlier. That’s the only way we know how to do it.

Why We Bake Every Morning

No freezer, no shortcuts.

I’m in the kitchen early, before the front door opens, putting pies in the oven. Karen taught me her mother’s recipes years ago, and I’m not going to do them halfway by freezing a batch on Tuesday and selling it on Friday. Every pie in the case was baked that morning. If you walk in at 11:00 AM and the pecan looks warm, that’s because it is.
